Leprechaun Sorbet

Ditch the McDonald’s classic for a simple, fun, homemade sorbet! This delicious treat is a kiddos favorite!

Ingredients:

  • Mint Ice Cream
  • Sprite
  • Whipped Cream
  • Green Sprinkles
  • Rainbow Gummies

Directions:

1. Place ice cream and sprite into a blender.

2. Blend on high until all ingredients are combined.

3. Pour your shake into a glass and add whipped cream, sprinkles, and top with rainbow gummies.

Paleo Shepherds Pie

“I do an amazing paleo shepherds pie and a special drink for the kiddos. They love it and look forward to it every season! They help me grab all the ingredients for their leprechaun sorbet and run around me as I bake their shepherd’s pie. It’s a tradition I’ll never forget from their younger years, and I’m trying to relish in the craziness.” – SimplyKaraliz

Ingredients: 

Inside Mixture:

  • 1 package of ground beef (1lb), I like an 85/15 ratio for this recipe
  • ¾ cups of beef bone broth
  • 1 cup chopped carrot
  • 1 cup cut green beans
  • 2 tbsp bacon grease (or ghee/oil)
  • 2 tbsp tomato sauce
  • 2 tbsp diced onions
  • 2 tbsp minced garlic 
  • 2 tbsp minced rosemary
  • 2 tbsp minced thyme 
  • ½ tsp salt to taste
  • ½ tsp pepper to taste
  • ½ tsp garlic salt to taste 
  • ½ tsp cajun seasoning to taste (optional)

Sweet Potato Topping:

  • 4 large sweet potatoes, cubed
  • ⅔ cup of unsweetened coconut milk 
  • 2 tbsp bacon grease (or ghee/oil)
  • ½ tsp salt to taste
  • ½ tsp pepper to taste
  • parsley, garnish 

Directions:

Inside Mixture: 

  1. Preheat oven to 375 
  2. Throw cubed sweet potatoes into salted water, wait for it to boil, and become completely soft
  3. While waiting for sweet potatoes, add bacon grease to a cast-iron skillet. Brown the ground beef.
  4. After the meat is browned, remove it from the skillet. 
  5. Saute herbs and vegetables
  6. After a few minutes add tomato sauce and beef bone broth 
  7. When carrots are soft, add the meat back to the skillet
  8. Add seasonings to mixture, taste
  9. Low simmer 

Sweet Potato Topping:

  1. Once the sweet potato is soft, use a mixer to add in coconut milk and bacon grease 
  2. Add salt and pepper to taste
  3. Garnish with parsley
  4. Gently spread the topping on top of the inside mixture 
  5. Place in the oven for 30 minutes
  6. Remove and let sit for 10 minutes

Avocado Pesto Linguine

The main course! You’ll be dreaming of this easy linguine for a long time. 

Ingredients:

  • 12 oz. Linguine
  • 1 Avocado
  • 2 c. Fresh Basil Leaves
  • 1/3 c. Extra-Virgin Olive Oil
  • Juice of 1/2 Lemon
  • 1/4 c. Pine Nuts, Toasted
  • Kosher Salt
  • 1 c. Grape or Cherry tomatoes, Halved

Directions:

1. In a large pot of salted boiling water, cook linguine according to package directions until al dente. Drain, reserving 1 cup of pasta water.

2. While linguine cooks, blend avocado, basil, oil, lemon juice, and pine nuts until creamy. Season with salt.

3. In a large bowl, toss pesto, linguine, 1/2 cup reserved pasta water, and tomatoes until combined.

Mint Chocolate Chip Brownies

Mint and chocolate. Name a better duo. These brownies are to die for!

Ingredients:

  • Cooking Spray
  • 1 Box Brownie Mix, Plus Ingredients Called for on Box
  • 28 Andes Chocolate, Plus Extra for Garnish
  • 1/2 c. Butter, Softened
  • 3 c. Powdered Sugar
  • 1/2 tsp. Mint Extract
  • 3 tbsp. Milk
  • 6 Drops Green Food Coloring
  • 1/2 c. Mini Chocolate Chips

Directions:

1. Preheat the oven to 350°. Line an 8″x 8” pan with parchment paper and grease with cooking spray. Prepare brownie batter according to package instructions and pour into the prepared pan. Top brownie batter with an even layer of Andes chocolates.
2. Bake until a toothpick inserted into the middle of a brownie comes out with only a few moist crumbs, for about 40 minutes. Let cool completely.

3. While brownies bake, make frosting: In a large bowl using a hand mixer, beat butter until light and fluffy. Add powdered sugar, mint extract, milk and a few drops of food coloring. Beat until smooth, then fold in mini chocolate chips.

4. Spread frosting in an even, thick layer over cooled brownies. Slice into squares and top with chopped Andes.
