This delicious favorite doesn’t have to be isn’t only confined to the four walls of a movie theatre or the rare occasion of a carnival. In fact, it’s JUST the thing to have in the car during We’re here to tell you that it is TOTALLY a thing to stuff your mouth with gourmet popcorn in the car during rush hour, while driving to and from your kids’ swim lessons or even between meetings at work.  

And, guys… it’s HEALTHY. Popcorn isThere’s a reason we put that word in bold, capitalized AND used italics. Oh yeah, not to mention it’s underlined! While we admit, it’s not exactly a super super food, popcorn is actually And popcorn isn’t just delicious,  it’s extremely high in fiber as well as a rich source of the antioxidant polyphenols that are which is known to prevent cell damage. Count us in!

A.K.A we want to pay attention because HEALTHY GOURMET POPCORN?!

And here we are, bringing it straight to you through the screen of your beloved computer. So in other words: please make this today. 

Ingredients:

½ cup popcorn kernels

1 tbsp coconut oil

sea salt 

*Seasoning options:

  • Cinnamon
  • Kettle Corn
    • raw cane sugar
  • Parmesan herb (make topping before popping the kernels)
    • parmesan
    • garlic powder
    • basil

Grate the parmesan and chop up the basil and mix it in with the sea salt and garlic powder. Set aside until the popcorn is popped. 

  • dark chocolate covered (make before popping the kernels)
    • 2 tbsp coconut oil
    • 1 tbsp caw cacao
    • 1 tsp maple syrup 

Directions: 

In a small bowl, combine the coconut oil (in its liquid form), raw cacao and maple syrup. Stir until combined and set aside until the popcorn is made. The coconut oil will cause the mixture to harden, so keep stirring every so often. Once mixed throughout popcorn, sprinkle with sea salt and leave to dry. 

To make the popcorn all you need to do is to set a popcorn kettle on the stove on medium-low heat. But if you DON’T have a popcorn kettle, we’ve got an improvisation. Set a decent-sized pot on the stove instead, stick a wooden spoon in it and cover it with a kitchen towel (be careful to keep the towel from the bottom of the pot so it doesn’t get burned..) 

Next, pour in the popcorn kernels with the coconut oil, and slowly stir the kernels together with the oil. (Note to self: if making kettle corn, this is where you add the sugar.) 

After a few minutes of stirring, you’ll begin to hear a popping sound. At that point, keep the lid/kitchen towel on but keep stirring so none of the popcorn pieces get burned. After the popping sounds start to die down, find a large bowl and pour the popcorn into it. If you decided to flavor it instead of simply topping it with salt and a little more coconut oil, then this is the part where you need to work fast. Pour your choice from the parmesan herb/chocolate mixture/cinnamon options above over the popcorn (still hot) and mix evenly throughout. After it cools, you can divide the popcorn into individual plastic or paper bags and take it on the go wherever you go!
