• 1 bunch of kale
  • 1 tbsp + 1 tsp olive oil
  • 1 tsp sea salt
  • 2 tsp sesame seeds
  • 1/ tsp paprika
  • 2 tsp lemon juice

First, preheat oven to 400° F.

Next, grab your big bunch of kale and rinse it under cold water.  Lay it on a towel and pat it as dry  as you can. 

Rip off the pieces of kale (depending on how big you want your chips) and place them on a pan. Drizzle the leaves with olive oil and massage it into the leaves. Note that this is a super important step. Massaging the oil into the leaves not only ensures crispness and flavor, but also breaks down the  tough cell structure, giving the kale a softer texture and allowing it to be digested more easily.

Then add your spices! Sprinkle the leaves with sea salt, sesame, paprika and lemon juice, and toss them together to get an even coat. Spread the leaves all over the pan, leaving as few as possible overlapping. Slide your pan into the oven and now you’re free to dance around the kitchen, watch Food Network reruns or get on the ground for a quick meditation while you set the timer for 12 minutes and wait for the kale to bake.
